Colombia has a unique agricultural wealth, with crops such as Capsicum chinense (habanero bell pepper) that stand out for their high content of bioactive carotenoids (capsanthin, capsorubin), compounds valued globally for their antioxidant properties and applications in food and natural colorants [1]. Currently, Asian markets dominate the production of synthetic carotenoids due to their low cost and mass production [2], but the growing global demand for clean-label natural products is redefining the sector, demanding plant ingredients with clear purity certifications [3].
