Abstract

Chilli peppers (Capsicum spp.) are important worldwide for their diversity, industrial applications, and bioactive compounds. VOC analysis defines aroma and flavor and is a quality control and genetic improvement marker. This study analyzed 26 accessions from the AGROSAVIA genebank (C. annuum, C. chinense, C. baccatum, and C. baccatum var. pendulum) by HS-SPME-GC-MS, with optimized extraction by DoE. Esters, monoterpenes, sesquiterpenes, alcohols, and alkanes were identified, showing the segregation of accessions according to coloration, allowing the identification of functional markers for the valorization of natural products. These findings can be strategically used in industries, demonstrating the practical implications of this research.
