Oxidative stress occurs due to an imbalance between the production of reactive oxygen species (ROS) and the antioxidant system's ability to neutralize them. This leads to protein carbonylation and contributes to various diseases. This study evaluated the antioxidant capacity of extracts from six endemic plants of San Juan de Nepomuceno. Using proteomic, chromatographic, and spectroscopic methods, the plants Limonaria, Rosemary, Chuchuguaza, Annatto, Sage, and Coca were identified with high content of polyphenols and flavonoids. The results showed significant antioxidant activity by inhibiting protein carbonylation across all extracts, and useful chromatographic patterns were obtained for future studies.
