PO34 Evaluation of the Anti-Aging Activity of Peptides Obtained by Enzymatic Hydrolysis with Actinidin from Colombian Quinoa Seed Proteins

This study evaluated the anti-aging activity of peptides obtained through enzymatic hydrolysis of quinoa (Chenopodium quinoa) seed proteins, rich in lysine, using actinidin, a cysteine protease with affinity for this residue. Proteins were isolated and characterized using the bicinchoninic acid (BCA) assay and sodium dodecyl sulfate-polyacrylamide gel electrophoresis (SDS-PAGE), yielding a peptide extract with a degree of hydrolysis (DH) of 21.6%. Antioxidant activity (35%) and inhibition of collagenase (87.9%) and elastase (30.98%) were determined, demonstrating potential for skin protection. Accompanied by in silico analysis, further prediction of their antioxidant and inhibitory capacity supports applications in nutraceutical and cosmeceutical products.
