PO48 Proteins present in legumes and their alteration after exposure to pyrethroids

Legume cultivation involves the use of pesticides such as cypermethrin (CYP), which can accumulate in the soil and affect plant proteins. This study investigated the effects of CYP on the proteins of three common legumes. The results revealed significant changes in protein solubility, structure, and function, which could compromise the nutritional quality and food safety of these crops. These changes may have important implications for legume production and consumption.
