Germination involves the breakdown and biosynthesis of molecules, resulting in a low-cost, efficient, and highly effective technique that enhances the nutritional profile of seeds. The objective of this study was to evaluate the effect of germination and pre-germination treatments with salicylic acid (SA) and ultrasound (US) on the compositional and antioxidant characteristics of flours obtained from germinated seeds of Cucurbita argyrosperma subsp. sororia (C. Sororia) and Cucurbita moschata (C. Moschata).
